Fit the double-bladed knife. Put the flour, sugar, and roughly chopped butter or margarine into the bowl. Break in the eggs and process for 5 seconds. Add the orange rind and juice and process for 3-5 seconds or until the cake is just mixed. Add the dried fruit and mixed peel to the bowl and use the pulse switch a few times to distribute it through the cake.
Turn into a greased and lined 1 lb (500 g) loaf tin and bake in a moderately hot oven (175°C, 350°F, Gas 4) for about an hour or until a skewer plunged into the centre of the cake comes out clean.
